Buckwheat honey puffs

Growing up we didn't have a lot of spare money, for us cereal was a treat that was bought in the school holidays only. We were each allowed to choose a box and that was it for the duration of the two week school break. Boy, we practically marked the level on our box each morning to make sure no one else had had any of our precious cereal! During term time it was porridge or toast. 

Now that I'm older I've realised two things, first my mum was really freakn smart (I already knew that, kind of). And secondly, that rule existed to save our teeth and our teachers from sugar fueled maniacs!  

This is a simple recipe for refined sugar and gluten free buckwheat honey puffs and they taste just as good as I remember! 

Take 2 cups of puffed buckwheat (or rice or spelt) and coat it in a mixture of melted coconut oil and honey, about a tablespoon and a half of each. Scatter the mixture along the tray of your dehydrator and dehydrate for a hour or two. You could do this in the oven too. 

We enjoyed ours with cold homemade cashew milk, delicious!
