Chocolate mud cake with whipped marscapone chocolate frosting


I was scrolling thru my archives (trying to tidy my photos to aquire more memory so my laptop will behave and I don't have to throw it against a wall) and I stumbled across this beauty. I made it about two years ago for a friends birthday. It was a lovely small dinner party, 6 guests it my memory is correct and we managed to get thru this entire cake, it was three tiers......and the plate was licked clean.


Chocolate mud cake

250 g butter, cubed

250 g dark chocolate, chopped

¾ cup boiling water

2 ½ cups spelt flour or a gluten free blend

½ cup cocoa powder

¾  tsp baking soda

2 ¼  cups brown sugar

4 eggs, lightly beaten

2 Tbsp oil

½ cup yogurt

Preheat your oven to 160 C(315 F)

Prepare two 22cm cake tins by lining with baking paper. 

Place the butter, chocolate and water into a saucepan over a low heat, stir until melted, take off the heat.

Sift the flour, cocoa and baking soda into a large bowl. Stir into the sugar. 

Add the combined egg, oil and yogurt, slowly stir in the melted butter mixture. Stir until smooth.

Divide the mixture between the two tins and bake for 1 hr 45 minutes or until a skewer inserted comes out clean.

Remove the cake from the over when cooked, Leave in the tin until completely cool, then turn out onto a wire rack.

Mascarpone cream frosting

250g Mascarpone cheese

1/3 cup cocoa powder

1/3 cup powdered sugar

1 cup heavy cream

Whip the mascarpone, cocoa and powdered sugar until creamy. Slowly add the heavy cream and whip until desired consistency.
