Cherry almond friands

I was flicking thru the photos on my hard drive this afternoon and found these gems, I made them a wee while ago at my mother in laws house. They were for a little tea party we had for my nieces birthday. We ate little cakes and drank pot after pot of tea, it was perfect, my niece got an amazing sugar high and ran in circles for about an hour, then she slept. 


Almond and cherry friands

  • 6 egg whites
  • 185g melted butter
  • 125g ground almonds
  • 240g icing sugar
  • 75g buckwheat
  • 20 fresh cherries 
  • 75g almond flakes


  1. Preheat your oven to 200C
  2. Place egg whites in a bowl and whisk until combined, add the melted butter, almond meal, sugar and buckwheat flour. Stir with a wooden spoon until combined.
  3. Spoon mixture into a prepared tin,place the cherries and almonds on top. Bake for 25 minutes.
  4. Cool the cakes in the pan for 5 minutes, turn onto a wire rack. 
  5. eat eat eat!
