How great is my cookie cutter, it rolls perfect circles every time!

Chickpea crackers

  • 2 cups chickpea flour
  • 1 teaspoon salt
  • 1 tsp baking powder
  • 2 tsp turmeric
  • 2 tablespoons ghee
  • 1/3 cup water
  • Maldon sea salt
  • 4 Rosemary sprigs
  • 1/4 cu grated parmesan 
  • dried thyme
  1. Place the chickpea flour, salt, baking powder and turmeric into your food processor, pulse to combine.
  2. Turn your food processor on low, slowly pour the ghee and water in a steady stream. The mixture should come together, if the dough is a little dry, add an extra tablespoon of water at a time.
  3. Wrap the dough in plastic wrap, allow to rest for 10 minutes. 
  4. While the dough is resting, preheat your oven to 180C.
  5. Roll out the dough to 1/8 inch thickness, sprinkle over the za’atar, Maldon sea salt, rosemary sprigs, parmesan and thyme. Roll over the mixture again to press into the dough.
  6. Cut crackers into desired shape, and place onto a prepared baking tray and bake for 18-20 minutes. 
  7. Remove the crackers from the oven and allow to cool.
  8. Store in a air tight container.
